Chocolate Zucchini Cookies: Vegan, Gluten-Free, Low Sugar

Zucchini bread? Nah, let's switch it up! These Chocolate Zucchini Cookies are the perfect bitesized protein boost you need. These delicious little morsels are vegan, gluten-free, low sugar, and infused with No Cow's chocolate plant-based protein powder!

INGREDIENTS:

  • 1 tsp of salt - this is for salting the zucchini prior to adding it to the cookies
  • 1 cup of zucchini shreds
  • 1/2 cup of vegan butter (I use earth balance)
  • 1/4 cup of cocoa powder
  • 1 serving of No Cow Chocolate Protein Powder
  • 1 tsp of baking powder
  • 1/4 cups of sugar- free maple syrup
  • 1/4 cups of water
  • 1 cup of gluten free flour

INSTRUCTIONS:

  1. Preheat your oven to 350°F and line your baking sheet with parchment paper or a silicone baking mat
  2. Using a cheese grater shred your zucchini if you prefer to use a knife, slice your zucchini in half, so you have two short rounds, then cut each side down the center so you have 4 quarters. Slice each quarter lengthwise in three slices to form thin slices, then slice again lengthwise to form thin julienne sliced zucchini, finish this by cubing them into small cubes
  3. Take your cubed or shredded zucchini and place on paper towels or a cheese cloth, top with your tsp of salt and toss gently with your hands
  4. Let your zucchini sit for 10 minutes until they are noticeably wet and shiny
  5. While your zucchini is sweating, in your stand mixer or a bowl with a hand mixer, beat your vegan butter with your sugar-free maple syrup until smooth
  6. Next add in your cocoa powder, No Cow Chocolate Protein Powder and water to form a smooth batter
  7. Add in your gluten-free flour and your baking powder to thicken the dough
  8. Remove your bowl from your stand mixer and set aside

9. Return to your zucchini that has been resting on the paper towels or cheese cloth, gather the zucchini in the cloth and twist the top so the zucchini is gathered at the center of your towel, squeeze and twist with all your might to ring the zucchini dry over the sink.

10. Using a rubber spatula, fold your zucchini pieces into your cookie dough

11. Use two spoons or a small ice cream scoop to scoop your cookies ½” apart on your prepared baking sheet

12. Bake for 12 minutes and repeat the baking process with the rest of your dough

13.Eat and enjoy!
