Chunky PB Sweet Potato Breakfast Bowl

These sweet potato breakfast bowls are a SOLID way to start your day. A sweet and salty mix packed with clean carbs and plant-based protein that will keep you full for…a long time. BOOM.

Serves 1-2.

55g carbs, 21g protein, 12g of fat per serving.

1medium sweet potato
1 tbspraisins
1 tbsp almond butter
1No Cow Chunky Peanut Butter Bar, cubed
1 tbsppecans
  1. Step 1:

    Preheat oven to 375 degrees. Wash and lightly dry sweet potato. Poke with a fork several times and wrap in aluminum foil. Bake sweet potato for around 60-70 min until a fork can easily pierce through it. Let cool for at least five minutes before peeling.

  2. Step 2:

    Peel cooled sweet potato. Mash in a bowl.

  3. Step 3:

    Top with raisins (or no raisins if you want less sugar), almond butter, pecans, and a No Cow Chunky Peanut Butter Protein Bar.
