Toni Okamoto is the founder of Plant-Based on a Budget, the popular website and meal plan that shows you how to save dough by eating veggies. She’s also author of the Plant-Based on a Budget Cookbook, co-author of The Friendly Vegan Cookbook, and the co-host of The Plant-Powered People Podcast. Okamoto’s work has been profiled by NBC News, Parade Magazine, and she’s a regular presence on local and national morning shows across the country, where she teaches viewers how to break their meat habit without breaking their budget. She was also featured in the popular documentary What the Health. When she’s not cooking up a plant-based storm, she’s spending time with her husband and their rescued dog in Sacramento, CA. Paige Michael (@peanutphysique) has a passion for making a difference and that’s what I’m here to do! I am a Penn State grad with a Bachelor of Science in Nursing. She specializes in the female body and now works as a full time Mother/Baby Postpartum Registered Nurse! She's also a full time online fitness & lifestyle coach for women and launched her Passion Physique supplement line in 2020! She's passionate about providing care to others and making personal, loving connections through the work that she does.

Shannon is a social media influencer, certified personal trainer, and health and fitness enthusiast living in Denver, Colorado. She has competed in both bodybuilding and powerlifting competitions but she mostly enjoys being active simply for the way it makes her feel! In her free time she enjoys trying new restaurants, listening to music, fashion, hiking, and enjoying all the other outdoor activities Colorado has to offer!

KRYSTAL GOODMAN, FNTP CPT

A graduate of the University of Tennessee, Krystal received her Bachelor of Science in Human Ecology, majoring in nutrition, while also minoring in Business Administration. During her time on Rocky Top, she was also an integral member of the rising leader in sports nutrition in Division I athletics, serving as Allison Maurer’s (C.S.C.S., R.D.) resident intern from 2009-2010. Her focus on nutrition and its relationship with athletic performance before, during, and after competition primed Krystal for a promising career whose influence has been felt throughout the Knoxville community.

Krystal Goodman’s passion for fitness and nutrition can only be matched by her clients’ performance in the gym and her first-class meal-prep in the kitchen. For over ten years, Krystal has been a personal trainer, building an impressive cliental and more importantly, a reputation for her clients’ results. She has shown her expertise as a coach while instructing fitness classes at Orange Theory Fitness when she isn't training one on one. Her national certification through NCSF as a CPT along with another in the world-renowned TRX training system, and AAHFF for nutrition make Krystal a versatile fitness professional.

KRISTIN YORKE

Kristin Yorke is a writer, reader, and a lover of all things she can do outside, preferably with her Boxer, Luna. She received her bachelor of arts from Colby College in Waterville, Maine, where she powered her collegiate lacrosse career on a dairy-free diet. She has been a dairy-free eater for 3+ years and is dedicated to exercising often and eating as many plants as possible.
